Question 780t fan controller

hello
i am wanting to know if using a three position dimmer switch, in place of the toggle button, will work for the in built fan controller. i want to do this to save myself from having to set the fan speed every time the system is powered on, i would like to be able to leave the fan controller in one position and it stay at that speed even if i turn the pc off and back on again.

I've never heard of anyone doing this kind of modification, wouldn't you be better plugging the fans into the motherboard & setting the fan speed through software?
