Select which LEDs you want the effect on. CTRL+Click/Drag allows you to add to an existing selection.
It defaults to all LEDs on the channel. You can change that.

I doubt that the Corsair One cooler is copper. From what I understand, it's a special edition of one of the Hydro Series AIOs, not HydroX.

It's the norm for Type 4 PSU cables from Corsair, not necessarily for others. The additional 3 wires are sense wires - they sense the actual voltage delivered to the motherboard.
