Use one of the 4 temp probes that came with the C-Pro and run it to the exhaust side of the radiator. This will give you a very close approximation to what most AIO owners see as their coolant temp. It will be a predictable and even, great for a control variable for the radiator fans. It will also be able to work when Link is not running. Depending on your reservoir model, you may also be able to use one of their plug/thermistors to give you a reservoir coolant temp. Those two values will tell you a lot about what's going on in the system.
