trackrat
Could be a dying battery in the UPS or too small a UPS or some other issue - all involving the UPS. It's not the PSU from the symptoms you report.

Synthohol
not that you are drawing the full 750W but shouldn't the UPS be rated the same or over the item its protecting? its 200W short of its output.

ritaylor
If I remember right, according to APC the backup supply is supposed to be 1.2 times the wattage of the power supply. If it's not and there is a brown out (blip in power to outlet) and the backup intervenes to correct the power from the wall, the surge from the power supply in the computer will overload the power supply and cut it off. Hence the shutdown.
trackrat
Maximum load on the CPU/Video card(s) means maximum load on the PSU, which means maximum load on the UPS. The UPS may just be too small depending on how it's actually rated?
