Can my board run dual channel?

I have a Gigabyte GA-8PE667 Ultra board and I now have 2x 512MB XMS Corsair sticks, have heard its best to run dual channel but this doesnt seem to happen, cant find anything in the mobo manual about it.

Anyone know how I can enable dual channel mode?

Your motherboard is single-channel only. It is based on the Intel i845PE chipset, which supports PC2700/DDR333 memory but not dual-channel. Thus, if you buy so-called "dual-channel" memory kits, the modules will work as if they are conventional DDR modules since dual-channel is a function of the memory controller (on Intel platforms, the memory controller is on the motherboard) and not the memory itself.
