Not sure why you'd be scared. You should be fine using either of them. Hard so say since you've not filled out your system specs but, TBH, on a mainstream CPU, you shouldn't see much, if any, difference between Balanced and Extreme.

It’s normal to hear the pump at 3000 rpm and no pump is silent at that speed. On the other hand, for your cpu you are not likely to see even a 1C change between Balanced and Extreme, so you might as well put at 2160 rpm and leave it.

You should be more concerned with fluid temperature than fan / pump speed, IMHO. Find the lowest pump / fan speeds that can keep your fluid temp in the mid-30's under load and you'll be fine :D:

Minimum coolant temperature will always be determined by case ambient temperature, so it is difficult to give a narrow, specific range. The rise in coolant temperature under load should be consistent for given given settings, so that part is more predictable. Since fan and pump settings are the two other factors in coolant temperature, they do have meaning.
