One year with this issue. The best thing is that this problem was introduced in a version after 2.16 (with 2.16 it works perfectly). So you should solve quickly just checking the changes of that release on git...

iCUE v3.2.87 and the problem persists

The new version still has the sidetone bug (when you mute/unmute the microphone, sometimes the sidetone is disabled, so you have to go to the CUE and move the slider a little to reenable it). It is pretty annoying... How many months I have to use the CUE version 2.16? Can you add an option to prevent the sidetone from ever being deactivated? I would have sidetone enable 100% time, even when the microphone is muted.
